Granola



Ingredients

1/2 cup (135g) Rolled Oats

2/3 cup (80g) chopped pecans /walnuts /almonds (your choice)

1 cup (120g) ground almonds (almond meal)

1/2 cup (80g) pumpkin seeds

1/2 cup (80g) sunflower seeds

1/2 cup (40g) shredded coconut

1 teaspoon ground cinnamon

1/4 cup (80ml) pure maple syrup

1/4 cup (60ml) extra virgin olive oil

2 tsp vanilla extract


Method

1.Preheat oven to 180°C Place oats, nuts, ground almonds, pumpkin seeds, sunflower seeds, coconut & cinnamon in a large bowl & mix.

2. Add maple syrup, oil & vanilla extract and mix gently to coat.

3. Spread out on a large, lined baking tray and bake until golden brown & crunchy.

4. Stir every 10 minutes. Allow to cool completely before storing in an airtight container
